INGREDIENTS:1 3–4 lb sugar pumpkin 2 cups Gruyere cheese, shredded 1 ½ cups White Cheddar cheese, shredded ¼ cup grated Parmesan ½ cup heavy cream 2 garlic cloves, minced ½ cup pumpkin lager (can be substituted with chicken broth or non-alcoholic beer) 3 tbsp cornstarch INSTRUCTIONS: Preheat the oven to 325°F. To prep the pumpkin Cut off the top and scoop out the seeds and guts of the pumpkin. Save those seeds for roasting, Scrape the inside until smooth. Place the pumpkin in a sturdy, oven-safe dish. Pour a little olive oil into the bottom, rub it all over the inside of the pumpkin and bake for 1 hour or until the pumpkin is soft and fork tender. While the pumpkin is roasting, make the cheese mixture.
In a medium-sized bowl mix together the Gruyere, cheddar, Parmesan, heavy cream, and garlic. Then in a small bowl or measuring cup, whisk together the beer and cornstarch until smooth. Once smooth, stir it into the cheese mixture. When the pumpkin is fork-tender, remove it from the oven.
